Boards, made for hard use making good food. End-grain black walnut and hard maple in the first. Maple and African lacewood in the second. Have even done them sized specifically for a full brisket out of white oak. 

This poor old pig of a family heirloom came in deeply scarred with two rotten feet from standing wet for over 50 years. Removed nearly all the knife scars and carved him a new set of black shoes from ebony. He'll be dancing in the kitchen for decades more to come.
